This is my favourite smoothie, you can use a pear instead of the pineapple if you prefer. If the texture is too thick add some more coconut water. The mint leaves make all the difference.
Serves 2
½ ripe avocado
Large handful spinach leaves
A few mint leaves
1 tbsp ground flaxseeds
Juice ½ lemon or lime
50g fresh or frozen pineapple
200ml coconut water
3 ice cubes (optional)
Scoop the flesh of the avocado into a blender, add all the remaining ingredients and blitz until smooth.
